In collaboration with The Everleigh, and leading Australian chef Peter Gunn (Ides), we’re delivering an other-worldy experience for diners and art-lovers in Melbourne.
A combustion of modern culinary flavours, in flawless synergy with SSIXX’s 360 degree immersive video artistry and interactive technology, that evokes a new dimension and transports you to another realm, Everleigh-After takes form at Fed Square in February within a secret sensory location.

About the menu
Immersive and theatrical as the digital art surrounding you, the Everleigh-After menu is composed of four courses served alongside bespoke cocktails and beverages borne from the masters of alchemy at The Everleigh. Peter Gunn has curated dishes around the iconic elements of The Everleigh drawing on the venue’s iconic interior to develop a narrative of history, art and flavour. Taking inspiration from ice, wood, leather and marble, the culinary journey is an ode to the past, present and future of gastronomy.
Commencing with the ice age, the first course will crystallise elements of the ocean on a bed of ice, acting as nature’s time capsule, the course will reveal itself on a crystal clear platter designed by Navy Strength Ice.
The second course manifests itself in a wooden box replicating the beginnings of man made structures and the discovery of fire and smoke.
The third course is inspired by the advent of agriculture with meaty flavours and leather textures unfolding in a tightly bound parcel of discovery.
The fourth and final course calls upon the magnificent marble city of Rome, guests will smash open a new take on Peter Gunn’s famous black box dessert and feast on the rich marble ruins.
