Melbourne’s own That’s Amore is a local success story, all about taking the bounty of superb Victorian milk and transforming it with the skills and knowhow of Sicilian-born cheese genius Giorgio Linguanti into more than 65 different types of cheese.

And what better way (or whey, even) to enjoy that bounty than in the form of four-cheese gnocchi served from a 40-kilo wheel of Grana? Complement that with ricotta-laden cannoli from sister brand La Cannoleria, throw in an extremely tasty porchetta roll made to a family recipe, and you’ve got a party on your hands.
