The panel will discuss how zero waste was achieved, how it became a catalyst for change in the hospitality industry – and ultimately led to SILO opening in London.
Douglas McMaster is a pioneer in zero-waste cooking. In 2010 he began the first zero-waste pop-up cafe in Sydney, followed by the zero-waste restaurant Silo by Joost in Melbourne’s Hardware Lane with Joost Bakker in 2012. He is the founder, chef and owner of SILO in London, author of the book Silo: The Zero Waste Blueprint.
Matt Stone has become one of Australia’s most respected chefs, bringing zero-waste and sustainable cooking methods to a mainstream audience. He was a chef-resident at futurefoodsystem at Fed Square throughout 2021, creating experimental zero-waste dinners, only using produce made in the closed-loop eco-house.
Joost Bakker is a pioneer in zero waste systems and achieved recognition for finding simple zero waste solutions to complex problems.
Joost’s futurefoodsystem has been a Fed Square resident since the start of 2021.
